INGREDIENTS
Sugar 1 cup or 200g
Orange zest 2 tbsp
Butter (unsalted and softened) 115g
Eggs (room temperature) 2
All-purpose flour 1 ½ cup or 180g
Almond flour ¼ cup or 50g
Baking powder 1 tsp
Baking soda ½ tsp
Orange juice (room temperature) ½ cup
Milk (room temperature) ½ cup
Icing as required
Almonds (toasted and halved)
Glazed Orange slices
Mint leaves
DIRECTIONS
In a bowl, add sugar, orange zest and mix well and set aside.
In another bowl, add butter, beat on medium speed for 2-3 minutes.
Add orange infused sugar, beat on medium speed for 2-3 minutes.
Add eggs, one at a time, beating well after each addition until the mixture turns pale and fluffy.
In a sifter, add all-purpose flour, almond flour, baking powder, baking soda and sift and fold well.
Add orange juice, fold well, add milk and fold until well combined.
Pour cake batter in a greased bundt pan, tap few times and place in a pre-heated oven at 180C for 18-20 minutes.
Garnish with icing, almonds and glazed orange slices.
