Juicy, smoky Tikka Boti served over buttery masala rice and finished with creamy BBQ sauce, this bowl is packed with flavour for your next iftar…

INGREDIENTS
Yogurt 1 ½ cup
Ginger garlic paste 1 ½ tsp
Green chilli (crushed) ½ tbsp
Coriander powder 1 tbsp
Kashmiri red chilli powder ½ tbsp
Himalayan pink salt 1 tsp or to taste
Cumin powder ½ tbsp
Red chilli powder ½ tsp or to taste
Garam masala powder ½ tsp
Mace powder ¼ tsp
Nutmeg powder ¼ tsp
Orange food colour ¼ tsp
Lemon juice 1 tbsp
Boneless chicken (1-inch cubes) 400g
Onion (diced) 1 large
Capsicum (diced)
Tomato (diced)
Cooking oil 3 tbsp
Caster sugar 1 tsp
Cream ½ cup
Charcoal for smoke
Butter 2 tbsp
Onion (finely chopped) 1 small
Green chilli (finely chopped) 1 tbsp
Fresh coriander (chopped) handful
Water 2 tbsp
White pepper powder ½ tsp
Black pepper (crushed) ½ tsp
Chicken powder 2 tsp
Rice (soaked and boiled with salt) 2 cups
Onion (rings)
DIRECTIONS
In a bowl, add yogurt, ginger garlic paste, green chilli, coriander powder, kashmiri red chilli powder, pink salt, cumin powder, red chilli powder, garam masala powder, mace powder, nutmeg powder, orange food colour, lemon juice and whisk well. (You can substitute all dry spices with ready tikka masala)
Add chicken and mix well, cover and marinate for 30 minutes.
Thread onion, capsicum, tomato and marinated chicken in a wooden skewer repeat steps 2 times more. (Makes 10-12) and reserve remaining marinade for later use.
In frying pan, heat cooking oil and fry chicken tikka sticks from both sides until light golden then cover and cook on medium flame until done (3-4 minutes each side) and set aside.
In same frying pan, add cooking oil, reserved marinade, mix well and cook on medium flame for a minute.
Turn off the flame, add caster sugar and cream.
Turn on the flame, mix well and cook for 2-3 minutes.
Give coal smoke for a minute. Creamy BBQ sauce is ready!
In a wok, add cooking oil, butter and let it melt.
Add onion, green chilli, mix well and sauté for a minute.
Add fresh coriander and mix well.
Add water, white pepper powder, black pepper crushed, chicken powder and mix well
Add boiled rice, mix well and cook on high flame for a minute.
In a serving bowl, add prepared rice, chicken tikka sticks, prepared creamy BBQ sauce, onion rings, fresh coriander and serve!
