Popcorn chicken

Ingredients

  •  3 cups flour
  •  2 teaspoons garlic powder
  •  ½ teaspoon salt
  •  ¼ teaspoon ground black

pepper

  • 2 eggs
  • 2 tablespoons lemon juice
  • 2 cups oil, or as needed
  • 3 skinless, boneless chicken breasts, cubed

Directions

  • Mix flour, garlic powder, salt and black pepper together in a bowl. Beat eggs and lemon juice together in a separate bowl.
  • Heat 2 inches of oil in a large pot over medium heat.
  • Dredge chicken in flour mixture; shake off excess. Dip into beaten egg. Lift up so excess egg drips back into the bowl. Press into flour mixture again to coat.
  • Lower pieces of chicken carefully into hot oil in batches; fry until golden brown, 7 to 8 minutes.
  • Transfer to a paper towel-lined plate to drain. Repeat with remaining chicken pieces.

Ingredients

  • 2 cups whole milk
  • 1/2 cup espresso or strong brewed coffee
  • 6 tablespoons maple syrup or honey, divided
  • 2 1/2 teaspoons vanilla extract, divided
  • 2 cups rolled oats
  • 8 teaspoons chia seeds
  • 2 oz. cream cheese, cubed and softened
  • 1/2 cup yogurt
  • Cocoa powder, to serve

Directions

  • In a large bowl, combine the milk, coffee, 1/4 cup of maple syrup/honey, and 1 ½ teaspoons of vanilla. Divide the mixture among 4 jars or airtight containers.
  • Stir 1/2 cup of oats and 2 teaspoons of chia seeds into each container, ensuring the oats are submerged in liquid. Cover and refrigerate for at least 4 hours or up to 12 hours.
  • In a medium bowl, whisk the cream cheese until smooth. Whisk in the yogurt, the remaining 2 tablespoons of maple syrup/honey, and the remaining 1 teaspoon of vanilla until well combined and creamy.
  • Spoon the yogurt mixture over the oats, spreading into a smooth layer. Dust with cocoa powder and serve chilled.
